Another Night, Another Brownie

I had a very relaxing evening last night. Here’s what I threw together for dinner:

I added lots of spicy seasonings along with salsa, a sweet potato, and jalapenos. Then I heated up some refried beans to accompany the veggies.

This was about the time I decided I was making a Mexican grain-free spin off :)

To top the mix, I used Chobani plain Greek yogurt (in place of sour cream) and more salsa. (No such thing as too much salsa, of course.)

I had a lot of leftovers too- the best way to go! Dinner- check. Lunch the next day- check. And on to dessert.

I just can’t help myself. These brownies are so good and I’m getting better results each time I make one. Just what I need, right? ;)

This was definitely my best dessert so far. I used this recipe as a base and swapped in coconut flour for whole wheat flour, applesauce for yogurt, used a little less sugar, and didn’t have any chocolate chips. I also mixed the ingredients in a separate nother bowl, which helped the appearance! Then I topped it all off with sprinkles of course. :D

I’m thinking I’ll take a break from my brownie mug infatuation for a few days.

    Haha I’m diggin the mug brownie obsession lately! I made brownie batter pancakes this morning instead of a mug brownie, but it was equally delicious. (recipe from livliveslife.com if you want to know!)

    I love Greek yogurt as “sour cream!” And hmm, I’m actually NOT on any crazy food kicks right now! Wait–I take that back! Plantains! Can’t get enough of ‘em. Something about Mexican/Latin food and spring, I think!

    I always forget how awesome refried beans are until I randomly buy them… so good!
    And I agree, no such thing as too much salsa!

    I have been avoiding dessert lately since I am trying to cut my body fat so tea has been the GO TO this last week which is fine with me! I have to curb that sweet tooth somehow!     I am the same way…I get addicted to a certain dessert and eat it for days in a row! Currently I am obsessed with cookies and cream icecream with m&ms and sprinkles mixed in. It’s the best!

    I feel like sprinkles make everything look, taste, and feel better when you are eating it. That brownie looks delicious though. I’ve never made anything in a mug before. Mainly because my mugs are always in use with hot tea or cocoa, but I’m definitely going to put one aside to make some crazy mug concoction.
